Cochon 555 is a nationwide whole heritage pig cooking competition, at the center of a massive party. There'll be wine, tartare, and tons and tons of pork.
5 chefs are each assigned a locally raised, heritage-breed pig, and they have to create 4-6 dishes using the whole animal, and celebrating the pig. I assisted the event planners one year, competed another, and ran the Tartare Bar last year.
This year I'm so excited - they invited me to attend as a judge of the competition!
